Winter Pesto

This is a great recipe when fresh basil is hard to find in the winter!  And it freezes very well!

5 cloves garlic (or to taste)

1 teaspoon salt

1 cup parmesan cheese, grated

1 teaspoon fennel seeds

2 cups fresh spinach leaves

2 cups fresh parsley

1 cup chopped walnuts

1 cup olive oil

In food processor, process garlic and salt together.  Add all other ingredients.

If using with pasta, for every pound of pasta, stir together one cup of pesto and 3/4 cup of the pasta cooking water.
