Rouladen

Monika H.

Beef top round steak cut into thin slices about 1/8th of an inch thick.
The piece of meat should measure about 5" x 10" and 1/8" thick

One piece of this meat makes one "Roulade". Usually it is one "Roulade" per
person per meal.

1 slice of breakfast bacon per piece of meat
onions thinly sliced
pickles thinly sliced
mustard
salt pepper

2       Tomatoes cut into quarters
1       onion cut into quarters
2       medium sized carrots cut into 3" pieces
2       5" pieces of leek (or some green onions with the green still on)

How to cook:

1. salt and pepper one side of the meat.
2. spread any kind of mustard on the side of the meat you just salted and
peppered
3. lay one slice of breakfast bacon (uncooked) on top of the mustard spread
meat
4. put on top of the bacon thinly sliced raw onions
5. on top of the all above lay some thinly sliced pickles

Now you roll it up from one end to the other and secure the end with
toothpicks

heat up a pot and put some vegetable shortening in it and put the Rouladen
into the hot oil and fry them so they are evenly brown all around.

while frying the "Rouladen" heat up your oven to about 375-400 °F.

Once you are done frying you you fill the pot up with 2-4 cups of water or as
much you need so the "Rouladen" are laying half into the water.

Add 2 tomatoes cut up in quarters, one medium onion cut up in quarters, two
medium sized carrots and two 5" pieces of leek (if you can't get a hold of
leek
then use green onions, but make sure you don't cut away the green part of
them!)

Now put the pot in the oven and let it cook 1 to 1 1/2 hours.

When they are done, take the "Rouladen" out of the pot put them aside and keep
them warm while you are making the gravy from the juices.

Strain the juices through a strainer so you filter out all the veggies of it.
Now make your gravy. I usually thicken my gravy with some flour and then add
some sour cream to it to smoothen it and give it a mild taste.

Once the gravy is done you put the "Rouladen" back into it and serve it.

We are usually having "Spätzle" and a Salad with it. (Spätzle is a German kind
of noodles)
