Potato Bannock

2 1/2 cups flour
2 TBSP baking powder
2 TBSP white sugar
1 tsp salt
1/4 cup shortening
1 cup milk
1 cup potatoes, mashed and cooled
1 TBSP milk
 
Method:
Preheat oven to 450 degrees.
In large bowl combine flour, BP, sugar and salt.  Cut in shortening till mixture resembles coarse crumbs.  Stir in milk and potatoes with a fork.  On a floured surface, knead dough about 10 times, work in more flour if dough is sticky.  Place dough on an ungreased cookie sheet and pat with hands to form a circle, about 1 1/2" thick.  Divide bannock into triangular serving pieces by slicing dough 1/4" deep.  Brush with milk and bake for 20 minutes till bannock is golden brown.
